I bought a sweetener at Trader Joe's. It's made with the blue agave
plant. An 11.75 oz. bottle costs about $3.50. It tastes so good
that it should be a sin, but it turns out to be OK. It's called "Organic
Blue Agave Sweetener". The sweet mild taste is perfect for
sweetening beverages, baking and as a multipurpose sweetener.
HOWEVER: Not all agave nectars are equal.
Here are some quotes from...

"Things you should know about Agave in the market. There are only 3 major producers of Agave Nectar in the world. Nekutli, IIDEA and us. You may see different brand names but the agave comes from these sources. Nekutli doesn't use Blue Agave Nectar, but uses "maguey" to produce their syrup. For some reason these other products contain unnatural sugars that are non existent in pure Agave Nectar (*Maltose, Sucrose, *Mannitol and others according to their chemical breakdown). These sugars are not healthy for those who monitor their blood sugar or are buying Agave because of a medical condition or for a healthy lifestyle. Our Agave Nectar is the only agave which contains 100% agave nectar produced today and does not contain these foreign sugars. The best agave for your body must be low in fructose (less than 50%), low in glucose and cannot contain any other sugars. We get a lot of questions about which agave's come from which companies. Just ask the company to see their chemical breakdown testing to see if they have any foreign sugars".

"In recipes, use about 75% less of this nectar than you would use of table sugar. 1/4 cup of agave nectar should equal 1 cup of table sugar. For most recipes this rule works well.
Agave Nectar has met the "food exchange requirements" by the American Diabetic Association and American Dietetic Association for product labeling! The benefits that can be derived from using Agave Nectar as your sweetener are numerous: * Agave Nectar is low glycemic. It will not over stimulate the production of insulin."
"If you are using Agave Nectar from any source other than Volcanic Nectar I hope it isn't for health reasons."
I haven't tried "Volcanic Nectar" yet, but I guess it is the best brand for your health.

This brand costs more but I think it is worth the price. Plus you can buy it in 55 gallon drums. So lets get it.
